Hey friend here is your answer
Due to the presence of green pigment called chlorophyll the leaves look green in colour.but before testing a leaf for presence of starch it is decoloured i,e the chlorophyll is removed by boiling in water .
This is done to observe clear presence of starch .as clear observations can't be made if chlorophyll is present
Hope it helps you

Why is chlorophyll extracted from leaf before testing it for the presence of starch?
- Greenish colour of chlorophyll can give a wrong indication of positive starch test.
Therefore, chlorophyll is removed by boiling in alcohol & then placing it in hot water before testing for starch.
