QUESTION:-

Why is fermentation important in bread making? Give reason

ANSWER:-

  • Yeast feeds on the sugar which is comprised in the dough and produces carbon dioxide and alcohol in a process called Fermentation.

  • The dough is left in a warm place during bread making. The heat causes fermentation to take place. Though, if the temperature is extremely high, for instance during the cooking process the yeast is destroyed.

  • During the period of fermentation carbon dioxide is produced and trapped as microscopic pockets of air within the dough of the bread which causes it to rise. While baking bread the carbon dioxide increases and causes the bread to rise further.
