Food is stored to use it in later time incase of there is any lack or need and also to save it from rotting.

Explanation:

Preservation of food in human culture is coming by generation-wise and can be seen in almost every society. Not only in human culture but in lower category of animals also we get the tradition of storing food such as ant, honey-bee, squirrel etc.

When there is an excess amount of food then we store the extra amount of food to make the food available in off season when that food production stops. For example, we get mango in summer, in a plenty amount and lots mango also get rotten, but in winter we don't get mango and to make mango available in winter we store mango in summer.  

Similarly, think about paddy or wheat, they are in our daily diet but, they grow only i winter and autumn. Then, how the demand of paddy in the form rice and wheat can be meet in our daily diet, except storing those crops there is no other way and that's why we store them.

Above we talked about plant products, but not only the plant products but animal products are also stored.

Just think about milk, it is not mandatory that in all over the world the production of milk will be same. It varies region-wise. But the use of milk and dairy products can be seen throughout the world. And in the area where there is excess production f milk here its getting rotten and in some area, there is the lack of milk, so, except spoiling we preserve it and supply it where there is a need. It's a great source of earning also. And as like the milk, it is also similar in case of fish and meet also.
