That's because, most metals, except mercury (Latin name : Hydrargyrum) are good conductors of heat (thermal conductors). Plastic is an insulator of heat.Therefore, the heat conducted through the frying pan through the gas stove doesn't conduct through the insulator, plastic, and doesn't pass onto our hands. Hence, we won't get affected by the heat and do the cooking process more efficiently.
