why is it easier to observe change of state in wax than in gold?

because wax has a much lower melting point than gold, and it is harder to melt gold. Gold takes a lot more time to melt, and solidify, and you would need EXTREME heat to evaporate it.

Also, gold is usually set to solidify in pretty shapes for jewellery, so to keep melting it weakens it. Gold is very expensive, and most people would consider it too expensive to be used for such basic experiments as changes of state.

Wax is easier, cheaper and faster to get hold of and to heat and cool.
