Organic solvents are generally non polar as compared to polar solvents like water. Ionic solute dissolves in polar solvents and covalent solute dissolves in non polar solvents. LiCl has sufficient covalent character because of greater polarisation. Henceit is readily soluble in non polar solvents such as acetone and ethoxyethane. Water is polar solvent. So, LiCl is insoluble in water.
