This is because in coming contact with water it reacts vigorously to form sodium hydroxide by producing fire. If it is kept in contact in air then also it catches fire as water vapor is present in the air.

Sodium is high reactive element. When it is exposed to air, it reacts vigorously with oxygen to give white sodium oxide.The reaction is so vigorous that it catches fire. In order to prevent sodium to react with oxygen, it is kept immersed in kerosene oil.
