Why is the direction of the electric field opposite to electron flow?

We should know that as Electric field ( E ) line always starts from positive charge and ends at Negative charge...

When a charge particle is being placed under an E , it experiences as Force ( electrostatic force ). Due to this force charge particle starts accelerating...

E - field lines directed from Positive to negative charge...

If a positive charge placed in an E , it experiences a repulsive nature of electrostatic force ( F = +qE ). This force produces an acceleration due to whcih it starts moving along the direction of E - Field lines ( As positive charge repel each other )

On the other hand , If a negative charge particle is being placed under an E. Negatively charged particle experiences a attractive nature of Electrostatic force ( F = -qE ). This force also produces an acceleration but in the opposite direction.
