you would have studied that,
PRESSURE=FORCE/AREA
which means that,
pressure is inversely proportional to AREA
so, if the AREA will be less, then the pressure on the object will be more...
so the AREA of the blade of a vegetable knife is kept small so that it applies more pressure on the object is more , even when less pressure is applied
