why is water not used instead of mercury in thermometerd when it is easily available to us​

Water is transparent liquid so if it is used in thermometer then we would not be able to see the level of temperature. Mercury being lustrous can be easily see. Mercury also does not expand or contract much on heating or cooling. As a result water is not used in thermometer.
