Why it is necessary to destarch the leaves of a plant before performing an experiment on photosynthesis?

A leaf of a plant should be destarched in order to check for photosynthesis! If the starch is already present in the leaf, then there's no accurate result of the experiment. And, also in the leaves that are exposed to sunlight n the one's that aren't.. we cannot identify the area where photosynthesis occurs. In order to identify the area and conditions in which photosynthesis occurs, we have to destarch a leaf of a plant.
