it is because of a neutralisation reaction to take place.we know that lemond has citric acid and tarmarind has tartaric acid. copper reacts with oxygen and forms copper oxide and oxides formed by metals are basic in nature so acid reacts with base and salt and water are formed and hence the copper vessels are cleaned.
