As pH of milk is around 6.5 to 6.7 which makes it slightly acidic.Milk contain lactic acid .As milk sours it's acidity increases.
The coagulation can be caused by adding enzymes rennet or any other edible acidic substance such as lemon juice or vinegar and then allowing it to coagulate. This increases acidity causes the milk protein to tangle into solid mass or curd.
