Mixture has more than one constituents which may have same or mostly different properties. So this change leads to change in melting and boiling point.
Also two homogeneous mixture may form a new compound with completely different properties. This leads to the above change.

Mixture does not have fixed melting and boiling point because the impurities present in it will increase the boiling point by demanding more heat for getting boiled and will not get easily melt also.
