Why NF3 is possible but NF5 is not

Because N cannot form compounds with +5 oxidation states , as it has no d-orbital in its outermost shell ,therefore it cannot expand its octet & its maximum covalence is restricted to 4,that's  why N cannot form compounds like NF3.
