In unsaturated fatty acids, the packing of the molecules is not done tightly as a result of which there are gaps between them.
Plant fats are mostly unsaturated and thus they are liquid at room temperature.
Animal fats on the other hand are mostly saturated fatty acids in which the molecules are packed tightly leaving no gaps between them.
Hence they are solid at room temperature.
