Chips are flushed with nitrogen gas to cut off the contact of oxygen with oily chips to prevent areial oxidation and preventing food from getting rancid

nitrogen gas is not reactive, it is used in bags of chips to prevent them from becoming rancid in nature.
rancidity can be described as being oxidation of fats and oil resulting in bad taste and odour.
