why restriction enzymes are are called molecular scissors?

Heya!!

Desirable gene is removed out from total DNA by using a special enzyme called Resrriction Endonuclease
they break DNA at specific site, so called molecular scissors. each restriction nuclease has it's own restriction site or recognition site

for eg:-

EcoR1 cut DNA at it's restriction site GAATTC
