Mostly, this occurs when the metal in question reacts with atmospheric oxygen, forming an oxide. Iron corrosion has a special name: rusting. Rust on the surface of iron tends to speed up its own formation (so you should always remove it.) The presence of water also greatly speeds up (catalyzes) rusting / corrosion.
