It is to protect them from decomposition by microbes. For microbes/microorganisms, dark, humid (wet) environments are very favourable. It is not related to their metabolism but in wet environments the multiply rapidly which leads to rot faster.
Thats why we dry grains usually in sunlight as it dry environment becomes harsh and microbes wont divide fast, and sun rays can kill present microbes too.
