Why should p0p be stored in airtight containers?

POP or CaSO4 . 1\2H2O (Calcium Sulphate Hemihydrate) should be stored in airtight containers because if not done so might lead to absorption of water (from atmosphere) by the POP and then it will get converted into gypsum( CaSO4 . 2H2O )which is hard and is of no use...
