to ensure all of the liquid or whateva u are taking temperature for has an even temperature.
ie when you heat something up the part directly on the source of heat will heat up quicker than the one further away. that is why we stir things up so the entire thing can become one average temperature.
stirring moves the molecules around and the ones that vibrate more distribute there energy with the ones that don't vibrate as much through collisions.
