Sodium metal reacts with protic solvents (solvents that have acidic hydrogens or are capable of hydrogen bonding). So that rules out water, ethanol, alcohols, and acids (such as acetic acid and any organic or inorganic acid). Sodium metal should also not be stored in halogenated solvents (such as dichloromethane, chloroform, etc.) because it will react explosively. Sodium metal is literally only inert to hydrocarbon solvents. That is why it is commonly stored and shipped in mineral oil
