why some substances dissociate into ions in water​

to dissolvean ionic compounds , the water molecules must be able to stabilize the ions that result forms in breaking of the ionic bond

water is a polar molecule,it has permanent dipole , when you place an ionic substance in water then the water molecules attract the positive and negative ions from the crystal

and their degree randomness increases (entropy ) therefore it gets dissociated
