because strawberry jam contains sugar which is a preservatives which keeps it free from pathogens...

Strawberry jam can be kept for a longer period because it is made up of raw strawberry and sugar is added to it to prevent it from fungi which spoils it but in raw strawberry nothing is used to preserve it for long that is why strawberry spoils before strawberry jam..
