Why the colour change near negative terminal in electrolysis?

The colour of the region of potato aroundthe wire that is connected to the positive terminal of the battery is - Bluish green. This is because the electrons from the negative terminal of the battery move inside the potato as the electrolysis occurs at the copper wire that is inside the potato.

Your electrolysis device causes reactions that pull apart the water even more. Since opposite charges attract, the hydrogen ion migrates towards and bubbles from the negative electrode and the oxygen-containing hydroxide ion migrates towards and bubbles from the positive electrode.
