Soft iron is a ferro-magnetic material and its placement between the poles reduces the reluctance of the flux path so that even a small amount of exciting current can produce sufficient amount of flux.
Cylindrical shape is provided so that the air gap wrt to the pole faces is uniform ( and minimum ) thus producing an uniform radial field.
