because the flour in Samosa is like a atmosphere which surrounds a planet the more is thickened atmosphere more heat get absorbed by it and the absorbed heat lasts for a longer time,that's why the samosa present hot for a longer time and also mashed potatoes in it which also absorbs heat that's lasts for a longer time and the thickned boundary(dough) does not allow heat to escape.
