Why the soft drink bottlee must be sealed under high pressure?

Soft drink is water with carbon dioxide dissolved in it. Problem is, at room temperature, carbon dioxide only dissolves in water under significant pressure. Companies handle that by designing bottles that can hold pressure, and producing and bottling it under pressure.

When you open the bottle, the pressure escapes, and carbon dioxide starts escaping into the air. That's why it bubbles, and it's why soft drink goes flat if you leave it out. If you put the cap back on, the escaping carbon dioxide builds up in the air space of the bottle, the pressure is re-established, and the carbon dioxide stops escaping. But the only way to get rid of that pressure is to get rid of the carbon dioxide. Then soft drink would just be water.
