Because meiosis includes crossing over, which is one of reason for variability in offspring.

Whereas mitosis do not include crossing over.

Here u can say, it is just because of crossing over during the process of meiosis the two non-sister chromatids exchange their genetic material thus,leading to formation of many different characteristics in offsprings.
