Pectin when dissolved in water form gel. Due to this it is used as setting and thickening agent in jam. It is used to give jelly like character to jams and marmalade and is also used to increase the strength of gel in jams that have low calories. Addition of pectin to jam also decreases the time of cooking that result in fresh fruit flavor in jam.
