Because the Constiution says we do. The roles the Constitution lays out for POTUS were designed to address historical problems the founders had recognized:
"Sign or veto legislation"- This is intended to be a check on the power of the Legislative branch. A weakness of a fully independent legislature is that in times of crisis single leaders tend to emerge from it anyway, who tend to use their position to seize complete power (I.e Oliver Cromwell and Augustus). A single leader who does not draw their power from congress, and has to approve laws passed by it discourages this. The ability to override a veto is a check on this check.
"Command the armed forces"- Militaries tend to work better when there is a clear and structured chain of command, and somebody has to ultimately be responsible for making big decisions and giving orders. To give this authority to congress would probably mean a fight between the House and Senate over who was in charge, and the "You take the army one day, I'll take it the next" approach didn't work too well for the Romans. You could just make the commander-in-chief a general who has to be approved by congress, but that hasn't tended end well either. A civilian leader, who is elected by as popular a vote as we can get with the electoral college acts as a check on the power of the military. The fact that soldiers swear an oath to obey the Constitution, and not to obey the President, is a check on this.
"Ask for the written opinion of his cabinet"- Not exactly a reason why POTUS is necessary, but a good indication of how the founders saw the Pres. as the head of a branch of the government, and not just a symbolic leader.
"convene or adjourn Congress"- Today Congress comes and goes without many problems. But the founders were well aware of how Parliament was able to usurp power during the English Civil by both refusing to show up, and also refusing to leave. This is another check on the power of the legislature.
"grant reprieves and pardons"- Just like the other two branches, the judiciary also needs a check on its power. This is the ultimate version of that.
"and receive ambassadors"- Foreign policy by committee is a horrible idea, and I can't think of a single time it actually worked well. Making the President the one who decides foreign policy helps avoid what would undoubted turn into a total cluster---- if the Senate and the House were deciding what the nations policy towards other countries should be.
