Because the British interfered in their religious life with the Enfield Rifle issue. Rumour spread that The cartridge of the bullet was made with beef which made the Hindu sepoys fear about their relogion. Further the sepys were ordered to move across the seas for war which again acc to the religious minded sepoys would cause them to lose their religion. Lastly there was no equality between the Indian and British army. Indians were not given higher ranks and was only preserved for British officers.Ranks were given not on the basis of merit.
Thus the Indian sepoys were unhappy with British rule and broke out in the Revolt of 1857.
