why would stable H2 react with O2 to form H2O when they're stable?​

they dont react under normal circumstances .

a trigger is required for them to react , it could be due to heat or light or other reagent .

A stable molecule take part in a reaction under certain condition so that the atom can attain more stability by forming a new molecule. Basically less energy more stable the molecule be. So in this example H2 and O2 reacts under certain conditions to form H2O which is more stable( lesser energy)
