Nitric acid(HNO3) is a strong oxidising agent. The Hydrogen gas produced during itsreaction with metal gets oxidised to H2O, hence no hydrogen gas is produced. Instead it evolves nitric oxides such as NO2,NO etc.

Hydrogen gas is not evolved when zinc is reacted with nitric acid becoz this is due to the strong oxidising nature of nitric acid.
It oxidised H2 produced to water and itself get reduced to any of the nitrogen oxide.
Only magnesium and manganese react with nitric acid to evolve hydrogen gas.
