A while after I moved to India I tried my hand at cooking butter chicken. I used a premixed foil packet of spices and oil, from a company called Parampara. It's supposed to be simple, mix it up in a pressure cooker with water, toss in cut up raw chicken, then cook for two whistles of the pressure cooker.
Yeah. The first time I tried I let it cook for two whistles, then turned off the gas. There was so much heat in it, that the pressure cooker still whistled three or four more times before it cooled off. Completely burnt butter chicken.
The second time, I tried turning off the gas after one whistle, shortly before the second. Pretty much the same result, a number of further whistles and completely burnt food.
The third time I turned off the gas just prior to the first whistle and it only faintly whistled, not the full on Whooooooooooooooooooo.
This time the chicken was a bit undercooked. I ate some, it was ok, not as good as gourmet or my soon-to-be mother-in-law's cooking.
