2 cups (400g) sugar

3 teaspoons baking powder
1 teaspoon salt
1 cup (240 ml) milk
Steps
1. Blend butter and sugar together.
2. Beat the yolk of 4 eggs and add vanilla essence.

3. Sift and add flour, baking powder and salt alternately with the milk, beating after each
addition.
4. Fold in 4 stiffly beaten egg whites. Pour batter into a lightly greased and floured. Fill 2/3
full.
5. Bake for 1 hour at 375ºF/190ºC. Before removing from pan, allow cake to cool for 10
minutes. Place on a wire cooling rack to cool completely after 10 minutes.
6. Decorate. When cool, dust with confectioner's sugar. This cake is best served with pieces
or fruit compote.
