This Sodium salt is used as soap. CH3COOC2H5 + NaOH -- CH3COONa + C2H5OH

Soaps are sodium or potassium salts of long chain fatty acids .When triglycerides in fat/oil reacts with aquous NaoH or KOH .they are converted into soap or glycerol since this reaction is lead to the formation of soap.i t is called the saponification reaction.
