When we keep food containing fats, oils , outside in the open for a long time, the oxygen present in the air reacts with the fats and oils to give a unpleasant odour . This property is called rancidity.
Food can be stored for a long time by adding presrevatives i.e, salt or sugar which avoids rancidity for a number of days.
Three different mechanisms of rancidity may occur. These are oxidative, hydrolytic, and ketonic.
