We all know that gooseberry (amla) is very rich source of natural vitamin C. According to websites fresh fruits or vegetables can cause loss of most of the Vitamin C Present originally, whereas amla is an exception as it contain substances that partially protect the Vitamin from being destroyed during heating or drying.

Now methods of preserving amla naturally are-

wash the amla, wipe it dry and steam for 6-7 minutes, you can use Idli cooker for steaming, after steaming it's segments will open up then you can press the amla with your thumb and index finger, after it cools down you remove the seed, spread it on a plate and dry it well in the sun until there is no moisture, then you can store it for longer time.

Second method is, without steaming amla, just cut them into small pieces, discard the seeds and keep them under sun and let them dry until all the moisture evaporates and it is completely dry.

Store in the air tight container at room temperature, it has a shelf life of one year.

If you want to use them you can soak them in hot water for 15-20 minutes and you can make amla chutney, amla buttermilk after grinding it.

You can make amla hair oil with this dried amla.
