A baker found that the cake is hard and small in size which ingredient had he forgotten to add that would caused cake to rise and became lite. give reasons.

The baker had forgotten to add baking powder. Baking powder is basically a mixture composed of baking soda, tartaric acid and starch. It is used in making cakes, breads and other baked food items. While preparing the dough, baking powder is added to the flour. When baking powder mixes with water, then the sodium hydrogencarbonate reacts with tartaric acid to evolve carbon dioxide gas which gets trapped in the wet dough and bubbles out slowly making the cake to rise and hence 'soft and spongy'. When baking powder comes in contact with the water then the tartaric acid and sodium hydrogencarbonate reacts to produce carbon dioxide gas and the bubbles makes the cake to rise. thus it becomes soft and spongy
