RANCIDITY:
This process of losing fats and oils due to oxidation is called rancidity. Example: We have often noticed that when keep fried chips outside for a long time it starts giving unpleasant smell and taste,this is due to rancidity.
4 methods for preventing RANCIDITY of food:
1.Adding antioxidants (substances which prevent oxidation) to food.
2.Storing food in airtight containers to slow the process of rancidification.
3.Refrigerating food also helps to slow down rancidification.
4.Replacing oxygen in the containers with another gas.
