Dear Student,

Rancidity -

  • Rancidity is the complete or incomplete oxidation or hydrolysis of fats and oils when exposed to air, light, or moisture or by bacterial action, resulting in unpleasant taste and odor.

Q. Buttermilk spoils if kept in a copper or brass container because -

  • Lactic acid is present in buttermilk.
  • When buttermilk is kept in copper/brass container for some time, it reacts with copper/brass to form a toxic salt.
  • This is unfit for human consumption and thus the buttermilk gets spoiled.

Thanks dear. Hope this helps you...
