Conversion of milk to curd is a physical change is due to chemical activity. The conversion process is a fermentation process. In this process, the lactic acid bacteria produce Adenosine triphosphate (ATP) from lactose present in milk. ATP produces lactic acid as a byproduct. This lactic acid reacts with casein in milk and changes its texture and taste. This fermentation process is an irreversible process. Thus the chemical reaction causes a change in milk's physical properties.
