Here Ram is given much importance since he ate the apple. Hence Ram is the subject of this sentence.

Similarly, 

Count your pennies, Actually this is a phrase. But since pennies are given more importance than counting, we treat pennies as the subject of this sentence.

Hence pennies is the subject as it is the main topic of discussion.
