Acylation is the introduction af an acyl group to an organic compound. 
An acyl group is a carboxylic acid derivative, where the hydroxyl group is removed:

Acid

R-COOH

Acetyl

R-CO+

The acyl group doesn't exist on it own, so practically chemist use acid haldies or acid anhydrides.

Acid chloride:

R-COCl

Acid anhydride:

R-(CO)-O-(OC)-R

Acetylation is just an example of a acylation. It's the introduction of the acetyl group (the acyl derivative of acetic acid) to a organic compound.
