nitride:only nitrogen N(-3)
nitrite: NO2(-1)
Nitrate:NO3(-1)

they have different endings because they are different ions.

-ide is used to represent the anion of an element by itself with no other elements involved.

the anion of Nitrogen (N) is the nitride ion
N^3-

the anion of chlorine (Cl) is the chloride ion
Cl-

-ite and ate are suffixes when O is part of the ion
Many elements can form ions with different numbers of O atoms, -ite is used for the smaller number of O atoms. -ate is used for the ion with the larger number of O atoms
