Dietary carbohydrates consist of sugars, starches and fiber. Some of these you can digest, and they provide the energy you need to power your muscles and support the activity of your cells. The carbohydrates you can’t digest don’t supply you with fuel.They can also cause uncomfortable gastrointestinal symptoms, depending on your overall diet and your particular physiology.

Simple carbohydrates get digested easily resulting in a spike in blood glucose and providing the body with a short-lasting source of energy.

The three major classes of carbohydrates are sugars, starches and fiber.  

Simple carbohydrates are sugars which are found naturally (e.g. Fruits, dairy products, etc.) and in refined sugars or processed foods (e.g. white sugar, corn syrup, corn syrup, fruit juice concentrates, etc.)

They provide calories, but lack essential nutrients like vitamins, minerals, etc. and dietary fibre.

As a result, their prolonged or uncontrolled consumption can lead to health problems like diabetes, cardiovascular diseases, obesity, etc.

Complex carbohydrates are the other two groups and are considered  better options as far as health is concerned.

Starches need to be broken down by the digestive system and raise blood glucose levels for a longer duration and produce a more lasting elevation in energy.

In contrast, fiber cannot be digested the property making it important in the management of various conditions.

Complex carbohydrates are found in whole, unprocessed foods.
