Lets say I am an assassin. A professional assassin with a reputation for killing my targets well. They all die.
If I don't kill my target and accept the counter-offer, nobody would take me seriously any more. I would be the joke of the assassins.
Probably, the person that hired me told someone else about hiring my services, so if I don't end killing my target, and I kill my contractor, chances are that this goes public.
And then someone would contract another hitman to kill me.
Plus, as I only accept jobs being paid an obscene amount of money, because I have a reputation, a counter-offer with more money would not be enough to give up my reputation…
