You can write about all of the changes we have had to make, ie grocery stores, food service etc. Or you can write about how you think the world will be after corona virus has left. I'm sure it won't just go back to normal and I am sure in years to come we will still feel hesitation when someone coughs. I am an essential worker (a pet store, not too exciting). Because of that I have seen a lot of people become rude and upset over small things, so you could write about the toll this has taken on peoples mental health.
